Tapioca Pudding

A traditional pudding from the old times, it has taste of vanilla and interesting texture that looks like paste. This recipe makes about 8 to 10 servings.

Ingredients:
  • ¼ cup Quick-cooking Tapioca
  • ¼ tsp Salt
  • ½ cup Sugar
  • 1 ½ tsp Vanilla
  • 3 Egg Whites
  • 3 Egg Yokes
  • 4 cups Milk
Method:
  • Beat the egg yokes slightly and put aside.
  • Beat the egg whites well in another bowl until white puffy peaks are formed and put them aside too for later use.
  • Put milk, sugar, salt and tapioca in a saucepan and put it on medium-high heat.
  • Stir egg yokes in the tapioca mix and stir it constantly.
  • Let it boil well and then remove the pan from heat.
  • Add vanilla to the pan and
  • Now remove from heat and add in vanilla.
  • Put the pudding mixture in a clean serving bowl and slide in the egg whites, folding them into pudding.
  • Cover with plastic stretch wrap and put it in the refrigerator to cool.
